BeetsAvailability: | Late June - November | History: | The beet is an intense vegetable, a member of the goosefoot family. Wild beets still grow along the Mediterranean coasts where they seem happiest just above high tide mark. | Medicinal* Uses: | Beets are a blood tonic and so are good for anemia, the heart, and circulation. They purify your blood, alleviate constipation, aid the liver, and promote menstruation.
| Cooking Suggestions: | There are many ways to prepare beets. Baking or
roasting them retains their natural sugars. Here on the farm, we usually
either bake or steam our beets. To bake, just stick them in the oven and
bake like potatoes. They are ready when you can stick it with a fork.
Peel the skins back to eat the tasty beet. When we steam our beets, we
peel them, then cut them up and put them in a steamer basket. |
